Grilled Sicilian chicken Ceasar salad

(2 servings)


1 package of By Amos "Sicilian" chicken breasts

2 cup cherry tomatoes, halved

4 cups baby kale

1/4 cup prepared Caesar salad dressing

optional: 1/4 cup baguette or gluten free bread croutons

optional: parmesan shavings
 

Grill chicken breasts; 2 minutes on each side.

Meanwhile toss the baby kale with cherry tomatoes and dressing.

Divide the salad between two plates, and top with croutons and cheese if using.

Slice both chicken breasts and serve each on top of salads.

Coffee Coriander Steak salad

Coffee Coriander Steak salad

(2 servings)


1 package By Amos "Coffee Coriander" steaks

2 cups spring salad mix

2 cups baby arugula

1/4 cup red onion, thinly sliced

1/2 cup blackberries

1 blood orange, peeled and segmented

1/2 cup pomegranate seeds

2 tbsp olive oil

2 tbsp balsamic or sherry vinegar

1/4 cup fresh mint leaves

salt and pepper to taste


Pan fry steaks according to directions on package

Meanwhile, combine salad ingredients together in a large bowl.

Divide salad between two plates, and drizzle 1 tbsp of oil and vinegar over each salad.

Sprinkle mint leaves over salad, and lightly season with salt and pepper.

Slice steaks, and top each salad with a steak.

Peppercorn Steak with sweet potato fries

Peppercorn Steak with sweet potato fries

(2 servings)


1 package By Amos "Peppercorn" steaks

2 medium sweet potatoes, peeled and cut into fries

1 tbsp olive or coconut oil

salt and pepper

2 cups green beans

1 tsp olive or walnut oil

(optional: horseradish or grainy mustard)


Preheat oven to 425 degrees.

Toss sweet potatoes in oil, season with salt and pepper and spread out on baking

sheet.

Bake for 25-30 minutes, tossing occasionally until lightly golden brown.

Steam green beans, toss in oil and season with salt and pepper

Grill steak; 2 minutes on each side.

Plate the sweet potato fries and green beans, and serve with steaks.

Serve horseradish or grainy mustard as a condiment for the steak.

Zesty Citrus chicken with Soba noodles and bok choy

(2 servings)


1 package By Amos "Zesty Citrus" chicken breasts

4 baby bok choy, halved

100g soba noodles

2 tbsp tamari or soy sauce

1 tsp sesame oil

2 tbsp sliced green onions


Pan fry chicken breasts according to directions on package.

Cook noodles according to directions on package, drain and

toss with soy sauce, sesame oil and green onions.

Blanche or grill bok choy.

Divide the noodles, boy choy between 2 plates, and serve each

with a chicken breast.
